HTM Festive Recipe: Healthier Rocky Road

This Healthier Rocky Road Slice is the kind of snack that offers a source of nourishment, especially in postpartum, when energy is low, hunger arrives fast, and your body and hormones are working overtime.

It’s rich and chocolatey, it’s also intentionally packed with ingredients that support a mother’s recovering body and long-term wellbeing.

It is versatile, you can almost use any dried fruit and nuts on hand, and it’s also the perfect Christmas treat to bring along to the special events and picnics.

The combination of almonds and macadamias brings healthy fats, fibre and minerals like magnesium — key for nervous system support and stabilising blood sugar.
Apricots, cranberries and goji berries offer natural sweetness alongside iron, antioxidants, and vitamin C to support healing and energy production.
Pepitas are a beautiful source of zinc to support tissue repair and immune function.
And the addition of cacao and maca brings a subtle superfood boost — cacao for its mood-lifting magnesium and antioxidants, maca for its grounding, hormone-supportive qualities.

The peanut butter and coconut oil help keep you fuller for longer, adding creaminess and healthy fats that are especially helpful for breastfeeding mothers who feel hungry every 15 minutes.

This slice is fun, festive and importantly easy, accessible nourishment that feels good to reach for.

Below is the full recipe - you can double if you like height or use a smaller tin.

Ingredients

Dry mix

  • ½ cup raw almonds, roughly chopped

  • ½ cup macadamias, roughly chopped

  • ½ cup dried apricots, roughly chopped

  • ¼ cup pepitas, roughly chopped

  • ¼ cup dried cranberries

  • 2 tbsp goji berries

  • ¼ cup shredded or desiccated coconut

  • Optional add ins: Hemp Seeds, Cacao Nibs, Puffed Quinoa

Chocolate base

  • Approx 225g chocolate - you can go dark or milk here, both are delicious

  • 2 tbsp crunchy quality peanut butter

  • 2 tbsp coconut oil melted

  • 1 tbsp maca powder

  • 1 tbsp cacao powder

Instructions

  1. Prepare the tin
    Line a small slice tin (approx. 20cm) with baking paper.

  2. Combine the dry ingredients
    In a large bowl, add chopped almonds, macadamias, apricots, pepitas, cranberries, goji berries and coconut.
    Scoop out a small handful (~½ cup) of the mix and set aside — this will be your topping.

  3. Make the chocolate mixture
    Melt the dark chocolate, peanut butter and coconut oil together in a heatproof bowl (microwave in 30-second intervals or use a double boiler).
    Whisk in the maca powder and cacao powder until smooth.

  4. Combine
    Pour the chocolate mixture over the large bowl of nuts + fruit (not the reserved topping). Mix until everything is well coated.

  5. Press + top
    Scrape the mixture into the lined tin and press down firmly.
    Sprinkle the reserved nut + fruit mix evenly over the top and gently press so it sticks, you can also sprinkle with hemp seeds or cacao nibs here

  6. Set
    Refrigerate for 1–2 hours or until firm.

  7. Slice + store
    Cut into squares and keep in an airtight container in the fridge for up to a week (if it lasts!)
