Two easy, nourishing recipe ideas for a Meal Train AND to fuel you for the week ahead

It’s no secret, we LOVE a Meal Train.

We love the way it cultivates community care, an accessible (free) platform that allows for new families to ask for and accept support, in the means of food.

If you are not familiar with a Meal Train, it is an online platform that allows your community, family and friends to sign up to dropping a meal, or purchasing a voucher for meals, during a timeframe like the fourth trimester.

We are up to or 9th Meal Train for HTM clients this year. We highly recommend having one, we set up the page and provide suggestions on what foods are nourishing and replenishing for the postpartum mother and her family.

We’d love to share two recipes that are perfect for adding to a meal train, or perhaps adding to your weekly rotation. Simple and made in bulk to last the entire week!

Apple, Rhubarb and Berry Crumble

Ingredients:

  • 1 cup of chopped apple (skin on)

  • 2 rhubarb sticks chopped

  • 1/2 cup of berries (can be frozen)

  • Squeeze of lemon

  • 1/4 cup maple syrup OR 1 tbsp coconut sugar for sweetness

  • 2 cinnamon sticks

  • 1/4 cup water

  • 1 tbs chia seeds

  • 1 cup rolled oats

  • 1/2 cup almond four

  • 1/4 desiccated coconut

  • 50g butter (melted)

  • 1/4 cup coconut sugar


Method:

  1. Heat oven to 160 Deg Fan Forced

  2. Chop the apple, rubarb and berries into a small saucepan and add squeeze of lemon, chia seeds, maple syrup or sugar, cinnamon stick and water

  3. Turn the stove on to low - medium to bring it to a simmer until the apple is soft (approx 15 mins)

  4. Prepare the crumble by adding the oats, almond flour and coconut into a bowl and mix

  5. Mix the butter with the coconut sugar, then mix into the dry mixture - you can do this with a mixing spoon

  6. Pour the fruit mix into a square 8inch oven bake dish or tray then pour the crumble on top

  7. Place in the oven for approx 30 mins

  8. Serve warm or reheat in the mornings topping with coconut yogurt




Roast Vegetable Frittata

Ingredients

  • 6 eggs

  • 1 cup roast vegetables finely chopped (pumpkin, sweet potato, zucchini, capsicum)

  • 1/2 cup flour

  • 1 tsp baking powder

  • 1/2 onion

  • Olive oil

  • Mixed Herbs Seasoning

  • Salt and peper

  • 1/2 cup Grated Cheese (optional)

Method

  1. Set the oven to 180 deg fan forced

  2. Chop the veggies up and add to a bowl, drizzle with olive oil and mixed herbs, lay out onto oven baked tray and place in the oven or airfryer to roast

  3. In a small frypan, sauté the onion in olive oil, then set aside to cool

  4. Meanwhile, beat the eggs in a seperate bowl

  5. Once the veggies are cooked and cooled, add and the onion to the bowl

  6. Add flour, baking flour, grated cheese and salt and pepper and mix

  7. Add mixture to 8inch baking dish and place in the oven for 35-40mins until cooked through

  8. Once cooled, slice up and pop in a container in the fridge — eat cold or warmed
